Coconut Berry Overnight Oats

Take a 5-minute break to assemble this recipe and your taste buds will thank you. This well-balanced snack is full of antioxidants from the blueberries and cherries. Antioxidants support your body as you encounter stress throughout your day. The oats contain a type of starch called resistant starch that serve as a prebiotic to feed the healthy bacteria in your gut. This simple, easy-to-make snack is also portable and perfect for those busy days.


Serving: 2 servings


Ingredients:

- 1 cup quick cooking rolled oats (Bob’s Red Mill is my favorite)

- 1 cup almond milk (or substitute for milk of choice)

- ½ cup frozen blueberries

- ½ cup frozen cherries

- 1 tbsp shredded coconut

- ¼ vanilla extract


Instructions:

1. Combine all ingredients in a 16 oz mason jar (or divide in two 8 oz mason jars).

2. Mix well with a fork.

3. Refrigerate overnight.

Overnight Oats are "berrylicious"
